Chicken Fajitas
An easy casual night dinner that everyone will love!
Equipment
- 1 Large Skillet/Frying Pan
- 1 Small Skillet/Frying Pan
- 1 Salad Spinner optional
Ingredients
- 2 Tbsp. Oil
- 1 lb. Chicken Breast
- 2 Bell Peppers (red, yellow or orange)
- 1 Yellow Onion
- 1 Tbsp. Lime Juice
- 1 tsp Cumin Powder or substitute the cumin, coriander and garlic powder for 1 Tbsp Epicure Fajita Seasoning
- 1 tsp Coriander Powder
- ½ tsp Garlic Powder
- 2 Cups Romaine
- 8 Corn Tortillas
- Salsa
- Cheddar Cheese optional
- Sour Cream optional
Instructions
- Cut chicken into ½-1 inch pieces. Heat 1 Tbsp oil in a large frying pan on medium heat. Add chicken and cook for 15 minutes or until chicken is thoroughly cooked.
- Slice onions and bell peppers and then cut into 2 inch pieces. Heat 1 Tbsp oil in small frying pan on medium heat. Add onions and bell peppers and cook until slightly browned (approx. 5 minutes)
- Add lime, cumin, coriander and garlic powder to chicken and stir until thoroughly mixed.
- Roughly chop lettuce and grate cheddar if desired.
- Serve chicken, onion and bell peppers on warmed tortillas, topped with lettuce and salsa (can also top with cheddar and sour cream if desired). Enjoy!
