Shrimp Paella

This easy but extra yummy shrimp paella recipe will make you feel like you're in Spain or on a beach in some tropical paradise!

Equipment

  • 1 Medium or Large Wok with a lid

Ingredients
  

  • 1 Tbsp. Oil
  • 1 Small Yellow Onion
  • 3 Cloves Crushed Garlic or 1½ tsp chopped garlic
  • 1 Large Tomato
  • 1 Large Bell Pepper (Red, Yellow or Orange)
  • 3 oz. Dried Chorizo
  • 1 Cup Arborio Rice
  • 1 tsp Paprika
  • 3 Cups Chicken Broth
  • 1 Cup Frozen Peas
  • 1 lb. Thawed Shrimp

Instructions
 

  • Dice onions. Chop tomato, bell pepper and chorizo into small pieces.
  • Heat oil in wok on medium heat. Add onion and garlic and cook until slightly brown (approx. 2 minutes). Add chorizo and cook for another 2-3 minutes until it begins to brown.
  • Add rice, chicken broth, tomato, bell pepper and paprika. Stir and bring to a slight boil. Turn down heat to low to keep it at a simmer, then cover.
  • Simmer for about 18-20 minutes until most of the liquid is absorbed. You don't need to stir.
  • Add peas and shrimp, stir and cook for another 3-4 minutes until shrimp are cooked.
