Turkey Meatloaf
This turkey meatloaf makes for an easy and delicious Sunday night dinner. Serve with rice pilaf or potatoes and vegetables. Adapted from The Blood Sugar Solution by Mark Hyman, MD.
Equipment
- 1 Small Food Processor
- 1 Large Mixing Bowl
- 1 Loaf Pan
Ingredients
- 1 Tbsp, Oil
- 1 lb. Ground Turkey
- 1½ Cups Pecans
- 2 Large Eggs
- 10 oz Spinach 200 grams
- ½ Small Onion
- 1 tsp Dried Basil
Instructions
- Preheat oven to 375℉.
- Grind pecans in a food processor and chop onion.
- Heat oil in a small frying pan on medium heat. Add onions and cook for about 2 minutes until slightly browned.
- Remove stems from spinach and steam in a covered frying pan with 2 Tbsp. of water until spinach is wilted. Remove excess water and then roughly chop.
- In a large mixing bowl, add turkey, pecans, eggs, steamed spinach, onion and dried basil and stir until well mixed.
- Add the turkey mixture to an oiled loaf pan and bake for 40 minutes.
