Jambalaya Soup
This flavourful soup makes my husband's mouth water as soon as he hears I'm going to make it! Hope you enjoy it as much as he does!
Equipment
- 1 Instant Pot or Slow Cooker with sauté option
Ingredients
- 1 large Yellow Onion
- 1 Tbsp. Oil
- 4 cloves Crushed Garlic or 2 tsp chopped garlic
- 2-3 sticks Celery
- 6 oz Chorizo Sausage 175 grams
- 1 tsp Dried Thyme
- 1 tsp Dried Marjoram
- ½ tsp Cayenne Pepper
- 4 cups Chicken Broth
- 1 can Diced Tomatoes 28 fl. oz.
- 1 cup Long Grain Rice brown rice recommended
- 8 Skinless Chicken Thighs
- 1 Bell Pepper (Red, Yellow or Orange)
Instructions
- Dice yellow onion and celery and cut bell pepper and chorizo sausage into small pieces.
- In an Instant Pot or Slow Cooker with a sauté option, heat oil then add onions and garlic and cook until slightly browned. Add celery, sausage and spices and cook for 5 minutes.If you don't have an Instant Pot or Slow Cooker with sauté option, you can use a pot or pan to sauté and then add to the Slow Cooker.
- Add chicken broth, rice and diced tomatoes and stir to mix. Add chicken thighs and submerge in broth. Scatter bell peppers on top.
- Cover and set to slow cook low setting for 7-8 hours or high setting for 2½-3 hours.
- Remove chicken thighs and shred them with a fork. Add them back to the soup and it's ready to serve.
