Beef Bowlrito
Super easy meal for those busy nights! Beef, beans, rice…and more veggies than a regular burrito! Adapted from Yum & Yummer by Greta Podleski.
Equipment
- 1 Medium Wok
- 1 Rice Cooker or pot to cook rice
Ingredients
- 1½ Cups Long Grain Rice brown rice recommended
- 1 Tbsp. Oil
- 1 Medium Yellow Onion
- 1 lb. Lean Ground Beef
- 1 Can Black Beans
- 2 Medium Bell Peppers (Red, Yellow or Orange)
- 1 Medium Tomato or 2 Roma Tomatoes
- 1 Cup Frozen Corn
- 2 Tbsp. Taco Seasoning (Epicure brand)
- 1 ½ Cups Salsa
- ¾ Cup Shredded Cheddar Cheese optional
- Cilantro optional
Epicure Guacamole
- 1 Avocado
- 1½ Tbsp. Epicure Guacamole Dip Mix
- Dash of Lime Juice
Instructions
- Cook rice according to package directions.
- Dice onions, tomatoes and bell peppers.
- Heat oil in wok on medium heat. Add onion and cook until slightly brown (approx. 2 minutes).
- Add ground beef to the wok and cook thoroughly until the beef is browned (approx 10 minutes). Drain extra fat.
- Rinse black beans thoroughly. Add black beans, bell peppers, tomatoes, corn and taco seasoning to the wok and cook approx. 5 minutes.
- Shred cheddar and romaine.
- To make guacamole, scoop avocado out of the skin and smash with fork. Add Epicure guacamole mix and a splash of lime juice, stir until smooth.
- Serve beef and veggies on top of rice and top with cheddar, romaine and salsa.
