Shrimp Paella
This easy but extra yummy shrimp paella recipe will make you feel like you're in Spain or on a beach in some tropical paradise!
Equipment
- 1 Medium or Large Wok with a lid
Ingredients
- 1 Tbsp. Oil
- 1 Small Yellow Onion
- 3 Cloves Crushed Garlic or 1½ tsp chopped garlic
- 1 Large Tomato
- 1 Large Bell Pepper (Red, Yellow or Orange)
- 3 oz. Dried Chorizo
- 1 Cup Arborio Rice
- 1 tsp Paprika
- 3 Cups Chicken Broth
- 1 Cup Frozen Peas
- 1 lb. Thawed Shrimp
Instructions
- Dice onions. Chop tomato, bell pepper and chorizo into small pieces.
- Heat oil in wok on medium heat. Add onion and garlic and cook until slightly brown (approx. 2 minutes). Add chorizo and cook for another 2-3 minutes until it begins to brown.
- Add rice, chicken broth, tomato, bell pepper and paprika. Stir and bring to a slight boil. Turn down heat to low to keep it at a simmer, then cover.
- Simmer for about 18-20 minutes until most of the liquid is absorbed. You don't need to stir.
- Add peas and shrimp, stir and cook for another 3-4 minutes until shrimp are cooked.
