Mandarin Salad

This salad with it's sweet, tangy dressing is great as a dinner side dish, or to have for lunch with some leftover chicken.
Prep Time 15 minutes
Course Salad
Servings 4 side salads

Ingredients
  

  • 1/4 Cup Olive Oil
  • 2 Tbsp. White Wine Vinegar
  • 2 Tbsp. Honey or maple syrup
  • ½ tsp Dry Mustard Powder
  • ½ tsp Celery Salt
  • ½ tsp Paprika
  • 8 Cups Spring Mix 150 grams
  • 3 Mandarin Oranges
  • 4 Green Onions
  • ½ Cup Slivered Almonds

Instructions
 

  • To make the dressing, mix olive oil, white wine vinegar, honey, maple syrup, dry mustard, celery salt and paprika in a bowl or salad dressing shaker bottle or cruet.
  • Put spring greens in a large bowl.
  • Peel mandarins and break up into segments and add to spring greens.
    You may wish to cut the mandarin in half if you prefer half segment pieces in your salad.
  • Cut green onions. Sprinkle green onions and slivered almonds on top of salad.
  • Serve with dressing on the side to add immediately before eating.
