Mandarin Salad
This salad with it's sweet, tangy dressing is great as a dinner side dish, or to have for lunch with some leftover chicken.

- 1/4 Cup Olive Oil
- 2 Tbsp. White Wine Vinegar
- 2 Tbsp. Honey or maple syrup
- ½ tsp Dry Mustard Powder
- ½ tsp Celery Salt
- ½ tsp Paprika
- 8 Cups Spring Mix 150 grams
- 3 Mandarin Oranges
- 4 Green Onions
- ½ Cup Slivered Almonds
To make the dressing, mix olive oil, white wine vinegar, honey, maple syrup, dry mustard, celery salt and paprika in a bowl or salad dressing shaker bottle or cruet.
Put spring greens in a large bowl.
Peel mandarins and break up into segments and add to spring greens. You may wish to cut the mandarin in half if you prefer half segment pieces in your salad. Cut green onions. Sprinkle green onions and slivered almonds on top of salad.
Serve with dressing on the side to add immediately before eating.
