Fish Cakes
A fun way to eat fish! Serve with diced potatoes and vegetables for a healthy alternative to fish and chips.
Equipment
- 1 Air Fryer or large skillet/frying pan
Ingredients
- 1 lb. White Fish
- 2 Med-Large Eggs
- 1 Cup Rice "Bread" Crumbs
- ½ Cup Shredded Cheddar Cheese
- 2 Green Onions
- 2 Tbsp. Oil
Instructions
- Pat the fish dry, then cut into small pieces. Add to large mixing bowl.
- Chop green onions and shred cheddar cheese.
- Add eggs, rice crumbs, cheese and green onions to the bowl and mix.
- If you are using an air fryer, spray avocado oil to coat the basket. If you are using a frying pan, heat 1 Tbsp. oil on medium heat. Make patties about ½ inch thick and place in air fryer basket or frying pan so the patties are not touching (approx 6 patties).
- If you are using an air fryer, spray patties with avocado oil. Set air fryer to 325℉ for 12 minutes. Repeat steps for second batch.If you are using a frying pan, cook patties for 5-7 minutes on low-med heat, flip the patties and cook for another 5-7 minutes. Repeat steps for second batch.
- Serve with your favourite sauce (e.g. tartar sauce, ranch, ketchup).
