Fish Cakes
A fun way to eat fish! Serve with diced potatoes and vegetables for a healthy alternative to fish and chips.

- 1 lb. White Fish
- 2 Med-Large Eggs
- 1 Cup Rice "Bread" Crumbs
- ½ Cup Shredded Cheddar Cheese
- 2 Green Onions
- 2 Tbsp. Oil
Pat the fish dry, then cut into small pieces. Add to large mixing bowl.
Chop green onions and shred cheddar cheese. Add eggs, rice crumbs, cheese and green onions to the bowl and stir to mix thoroughly.
If you are using an air fryer, spray avocado oil to coat the basket. If you are using a frying pan, heat 1 Tbsp. oil on medium heat. Make patties about ½ inch thick and place in air fryer basket or frying pan so the patties are not touching (approx 6 patties). If you are using an air fryer, spray patties with avocado oil. Set air fryer to 325℉ for 14 minutes. Repeat steps for second batch.If you are using a frying pan, cook patties for 5-7 minutes on low-med heat, flip the patties and cook for another 5-7 minutes. Repeat steps for second batch. Serve with your favourite sauce (e.g. tartar sauce, ranch, ketchup).
