Mandarin Salad
This salad with it's sweet, tangy dressing is great as a dinner side dish, or to have for lunch with some leftover chicken.
Ingredients
- 1/4 Cup Olive Oil
- 2 Tbsp. White Wine Vinegar
- 2 Tbsp. Honey or maple syrup
- ½ tsp Dry Mustard Powder
- ½ tsp Celery Salt
- ½ tsp Paprika
- 8 Cups Spring Mix 150 grams
- 3 Mandarin Oranges
- 4 Green Onions
- ½ Cup Slivered Almonds
Instructions
- To make the dressing, mix olive oil, white wine vinegar, honey, maple syrup, dry mustard, celery salt and paprika in a bowl or salad dressing shaker bottle or cruet.
- Put spring greens in a large bowl.
- Peel mandarins and break up into segments and add to spring greens. You may wish to cut the mandarin in half if you prefer half segment pieces in your salad.
- Cut green onions. Sprinkle green onions and slivered almonds on top of salad.
- Serve with dressing on the side to add immediately before eating.
